Which webmail package are you using? cPanel offers several.

I would like to create a redirect (mymail.mydomain.com) that
would send the user to the horde login screen. However, rather
than the default cpanel login screen which appears I would like
to have a custom screen with a local logo, and other
information.

I see. The it could be just a case of looking at the source code for the
login page, recreating that page yourself and having the form you create
submitting the required fields to wherever the original login page has
in the "action" attribute for its login form.
